Caesar Salad Dressing
Megs and I adapted this delicious Caesar dressing from Uncle Richard. When the Rosenbloom family and the Curry’s gather, we always request Uncle Richard house dressing. We thought it was about time we shared this delicious version that we all love that has a bit of a twist on the classic Caesar.
1/4 C Safflower, olive, or sunflower
1 Egg (optional)
2-3 cloves garlic
1 Tbl Apple Cider Vinegar
1 1/2 tsp. Worcester Sauce (make sure to fine one that’s gluten free)
1/2-1 juice of a lime
1 tsp. anchovy paste
Pinch of sea salt
Pepper to taste
Add all ingredients into a blender and blend until smooth.
Serve over Romaine leaves, grated Pecorino Romano cheese and croutons.
